our first release.

i tried six cultivars. this was the one i kept coming back to.

shizuoka is mostly sencha country. tsuyuhikari is the weird one — a matcha cultivar in a sencha prefecture, parents shizu-7132 (sakura-aromatic) × asatsuyu (umami), registered 2003. very specific, very floral.

i work directly with the farm. small shipments, frequent, on purpose — so what i whisk at pop-ups is close to the harvest.

tastes like

deep green, almost emerald. sweet up front, herbal in the middle (kind of like sakura-mochi if you’ve had it), clean finish. drinks straight or as a latte.
